Distillery Information

Bayou Rum is distilled from locally grown sugarcane in southern Louisiana, USA. Our molasses comes from the oldest family-owned and operated sugar mill in the United States. Every batch of Bayou Rum is distilled in copper pot stills, aged mostly in Bourbon casks and bottled in house.
Bayou Single Barrel Rum, a version of their base Bayou Rum that's aged for two years and four months in used rye whiskey barrels and bottled at 80 proof.
Light rums, also referred to as "silver" or "white" rums, in general, have very little flavor aside from a general sweetness. Light rums are sometimes filtered after aging to remove any colour. The majority of light rums come from Puerto Rico.
Distilling Rum. While it's possible to run a distillery by majority computer, we prefer to distill and age rum using both science and art. We batch distill in a 500 gallon steam jacketed, custom pot still. Our pot still is 100% copper and includes a custom fabricated lentil.
Easily confused with a brewery, a distillery is different in that a distillery makes hard alcohol such as vodka, gin, whiskey, rum, etc., whereas a brewery solely brews delicious beer.First things first, put simply rum is made from sugar cane. In fact, it's made from 100% cane product. This includes raw cane juice, white or brown cane sugar, cane syrup, evaporated cane sugar and cane molasses.
Both dark and white rum brands go through a similar distillation process. Typically white rum is distilled in a column still, which allows for continuous distillation. These tall, narrow vessels remove many of the impurities during the distillation process.
