Cognac is distilled twice in onion-shaped copper pot stills (called alembic charentais), but unlike whisky, there is a strict timetable enforced. In the Cognac region, distillation begins towards the end of November, and must be finished by 31 March the following year.Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
