Hennessy & Cie., commonly known simply as Hennessy (French pronunciation: [ɛnɛsi]), is a French producer of cognac, which has its headquarters in Cognac, France. Jas Hennessy & Cie.
For over 250 years, Hennessy has been crafting one-of-a-kind cognacs in the heart of the Charente region in France.
Hennessy only uses Ugni Blanc grapes from the soil surrounding the famous Charente river. These light and fruity grapes go hand in hand with their double copper pot distillation technique, resulting in a unique eaux-de-vie.
Hennessy X.O is the Original, the emblematic icon of the Hennessy Maison. Deep and powerful, the eaux-de-vie of this Hennessy X.O cognac are aged in young barrels and marked out by their power and energy, but also by their capacity to achieve a great roundness through time.
Cognac is distilled twice in onion-shaped copper pot stills (called alembic charentais), but unlike whisky, there is a strict timetable enforced. In the Cognac region, distillation begins towards the end of November, and must be finished by 31 March the following year.Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
According to Hennessy, it takes over 6.5 pounds of grapes to make one liter of eaux-de-vie. Hennessy transfers the eaux-de-vie to French oak barrels from the Limousin forest, where it remains for decades to create X.O (via Bar and Restaurant).Maurice Hennessy, driven by a quest for innovation and a demanding philosophy of the subtle art of blending eaux-de-vie, conceived Hennessy XO in 1870. This Cognac, composed of one hundred long-aged eaux-de-vie, naturally took the name X.O, which means "Extra Old".
